The culinary workshop features a menu of two dishes, both vegan: one originating from northern Iran (called Mirza Ghasemi) and the other from the southern region of the country (called Do piazeh). These recipes are contemporary interpretations of traditional classics.
During the workshop, the instructor Nima Emrani will begin by providing a brief introduction to the historical and cultural background of each dish, followed by a live cooking demonstration. Participants will also learn how these recipes can be presented in different ways or adapted into non-vegan variations, offering further creative possibilities and inspiration.
Nima Emrani was born in Tehran, where he first studied theater before pursuing a professional career in cooking. He worked as a chef in Tehran and later in Montreal, developing a creative and thoughtful approach to gastronomy. He is currently writing a reference dictionary on Iranian cuisine, modernizing traditional recipes to suit an international, contemporary, and environmentally conscious lifestyle.
